Easy Meatball Orzo

Ingredients:

  1. 1pkg boursin/alouette (cheese spread)

  2. 16oz orzo

  3. 1c sundried tomatoes in oil, drained

  4. 15-20 frozen meatballs (or other protein)

  5. 4c broth

  6. Spinach 2c frozen, few handfuls fresh

7. 1T Italian seasoning

Directions

  1. preheat oven to 400

  2. Put all ingredients into 9×13 pan, do not worry about mixing the boursin in

  3. cover and bake for 25 mins

  4. remove cover, stir, bake uncovered 25 mins or until not soupy

Notes - I have done it with raw chicken thighs, it came out good but its a lot more work to prep the chicken
